Se pun apoi ficateii peste ceapa si se prajesc putin pe ambele parti. Cand sunt gata, se toarna laptele si se lasa sa fiarba cam 10 minute. Se prepara rantasul din faina si cateva linguri de lapte si se adauga peste sosul din tigaie amestecand continuu sa nu se formeze cocoloase. Se lasa sa dea cateva clocote apoi se da jos de pe foc, se adauga usturoiul pisat si se potriveste de sare. Cand apa incepe sa clocoteasca se adauga ficatul si se lasa sa fiarba aproximativ 10-15 minute. Daca se apasa cu o furculita in partea mai groasa a ficatului si nu iese sange, atunci e semn ca a fiert suficient. Se trage vasul deoparte si se lasa sa se raceasca. Se scoate ficatul, se scurge si impreuna cu ceapa si untul se paseaza la blender, sau se poate trece prin masina de tocat carne cu sita cea mai mica. La final se adauga cate putin din zeama de la fiertul ficatului pana se obtine o pasta omogena. Galbenusurile se freaca cu zaharul, iar albusurile se bat spuma cu un praf de sare dupa care se adauga in galbenusuri. Se incorporeaza apoi faina, amidonul si cacaua, toate cernute. Se toarna compozitia de blat in forma de inima, tapetata cu hartie de copt si se baga la cuptor pentru cca 10-12 minute. Se face testul cu scobitoarea.</span> <span style="color: rgb(0, 102, 0); font-weight: bold;"><br />CREMA DE IAURT</span> <span style="font-weight: bold;"><br />Se hidrateaza gelatina in 150 ml zeama de <a style="color: rgb(0, 102, 0);" href="http://chitacornelia.blogspot.com/2011/08/compot-de-visine.html">compot de visine</a>, apoi se dizolva pe baie de aburi (nu trebuie sa fiarba). Se lasa sa se raceasca. Se amesteca iaurtul cu zaharul, se adauga compozitia cu gelatina peste iaurt, apoi se incorporeaza frisca batuta bine. Se baga crema la frigider pentru cca. 20-30 de minute.</span> <span style="color: rgb(0, 102, 0); font-weight: bold;"><br />CREMA DE CIOCOLATA</span> <span style="font-weight: bold;"><br />Se pune ciocolata si frisca intr-un vas pe baie de aburi si se amesteca pana se topeste ciocolata. Se ia de pe foc si se adauga alcoolul. Se lasa sa se raceasca apoi se incorporeaza in untul frecat spuma.</span> <span style="color: rgb(0, 102, 0); font-weight: bold;"><br />GLAZURA</span> <span style="font-weight: bold;"><br />Toate ingredientele se pun intr-un vas pe baie de aburi si se amesteca pana se topeste ciocolata si se omogenizeaza perfect. Cand este gata se da de pe foc si se lasa putin </span><span style="font-weight: bold;">sa se raceasca</span><span style="font-weight: bold;"> .</span><span style="color: rgb(0, 102, 0); font-weight: bold;"><br />ASAMBLARE</span> <span style="font-weight: bold;"><br />Se taie blatul pe jumatate, se tapeteaza tava in care am copt blatul, cu o folie transparenta, se aseaza prima felie de blat si se insiropeaza cu zeama de la compot. Se toarna apoi crema de iaurt si se baga la frigider pentru aproximativ o ora, dupa care se scoate si se aseaza peste crema un strat de visine fara samburi si bine scurse. Deasupra lor se toarna crema de ciocolata. Se aseaza a doua felie de blat insiropata tot cu zeama de compot si se da din nou la frigider pentru inca 2-3 ore. Cand incepe sa clocoteasca se adauga toata cantitatea de faina si se amesteca repede cu o lingura de lemn pana ce aluatul se omogenizeaza si se desprinde de pe peretii vasului. Se da vasul de pe foc, se lasa sa se raceasca dupa care se adauga ouale, unul cate unul, amestecand bine dupa fiecare. Nu se adauga urmatorul ou pana ce primul nu este bine omogenizat. La final se pune esenta de vanilie. Cu ajutorul unui pos cu sprit se formeaza rozete mici, pe o tava tapetata cu hartie de copt. Se introduce tava in cuptorul incins si se coc cca 20-25 de minute (in functie de cuptor), iar in primele 15 minute sub nicio forma nu se deschide usa cuptorului. Dupa ce se scot din cuptor se lasa sa se raceasca. Cojile calde fiind, nu se pun unele peste altele ca se vor lasa.</span> <span style="font-weight: bold;"><br /></span><span style="color: rgb(0, 153, 0); font-weight: bold;">CREMA:</span> <span style="font-weight: bold;"><br />Se amesteca bine zaharul, faina si ouale cu putin lapte caldut pana se omogenizeaza, apoi se toarna restul de lapte si se pune pe foc mic amestecand mereu pana se obtine o crema mai groasa precum budinca. Ouale cu zaharul se bat pe baie de abur pana se ingroasa, dupa care se da deoparte. Se dizolva gelatina in laptele caldut si se amesteca apoi in crema de oua. Se lasa crema sa se raceasca apoi se adauga usor in frisca batuta. Se pun apoi fructele scurse bine si taiate dupa preferinta iar la sfarsit se adauga esenta de vanilie. </span><br /><span style="color: rgb(0, 153, 0); font-weight: bold;">ASAMBLAREA:</span><br /><span style="font-weight: bold;">Blatul rece se taie in doua. Se aseaza prima felie de blat pe un platou, se pune in jurul blatului inelul de la forma in care a fost copt blatul, se insiropeaza cu zeama de la compot, se toarna crema amestecata cu fructe si se aseaza a doua felie de blat insiropata. Frisca se bate bine si se pune deoparte. Se separa ouale, pastrand doar 4 albusuri pentru crema. Galbenusurile se freaca bine cu cele 250 gr. zahar, apoi se pune vasul pe baie de aburi si se freaca pana se topeste zaharul. Se lasa compozitia la racit. Dupa racire se incorporeaza crema mascarpone. Cele 4 albusuri se bat bezea cu 5 linguri de zahar si se incorporeaza in crema de galbenusuri amestecand usor cu lingura de jos in sus. La sfarsit se incorporeaza frisca. Se inmoaie fiecare piscot (nu prea mult) in cafeaua amestecata cu esenta de rom apoi se aseaza in straturi pe o tava. Se pune peste primul strat de piscoturi un strat de crema, din nou un strat de piscoturi apoi restul de crema. Se pudreaza cu cacao data prin sita si se da la rece pentru cel putin 3-4 ore. Se pune catina in borcane (nu conteaza gramajul borcanului, eu am pus in borcane mici) si se toarna miere cat sa acopere catina. Se pun capacele la borcane si se pastreaza la frigider. Cand este aproape gata se adauga zahar si sare dupa gust si se lasa sa mai fiarba putin pana se topeste zaharul si sarea. Pe o tava de aragaz se aseaza sticlele incinse in cuptor si cu ajutorul unei palnii si a unui polonic se toarna bulionul fierbinte in sticle. Se capseaza imediat apoi se invelesc sticlele in paturi si se lasa pana se racesc complet.
